Pot Roast Meat Loaf

  1. Mix first 8 and shape into a loaf in center of a 13 x 9 x 2-inch pan.
  2. Peel and slice potatoes, onions and carrots (sliced lengthwise).
  3. Mix parsley flakes, salt and pepper.
  4. Place vegetables in layers around meat.
  5. Sprinkle each layer with part of salt mixture.
  6. Cover pan tightly with foil.
  7. Bake in 375u0b0 oven for 1 hour or until vegetables are tender.
  8. Uncover and bake 10 minutes more to brown meat.
  9. Serves 4.
