Pot Roast Meat Loaf
- 1 lb. ground lean beef
- 2/3 c. canned milk
- 1/3 c. Progresso Italian style bread crumbs
- 1 tsp. salt
- 1/4 to 2 tsp. Worcestershire sauce
- 1/4 tsp. pepper
- dash of minced garlic
- 2 strips bell pepper, chopped fine
- 3 medium potatoes
- 3 onions, sliced 1/4 inch thick
- 3 medium carrots, sliced lengthwise
- 2 tsp. dried parsley flakes
- 1 tsp. salt
- few grains pepper
- Mix first 8 and shape into a loaf in center of a 13 x 9 x 2-inch pan.
- Peel and slice potatoes, onions and carrots (sliced lengthwise).
- Mix parsley flakes, salt and pepper.
- Place vegetables in layers around meat.
- Sprinkle each layer with part of salt mixture.
- Cover pan tightly with foil.
- Bake in 375u0b0 oven for 1 hour or until vegetables are tender.
- Uncover and bake 10 minutes more to brown meat.
- Serves 4.
