Orange Glazed Pecans

  1. Oil a work surface, i.e., counter top, marble slab, flat baking sheet.
  2. Combine orange peel, juice, sugar and spices in medium size saucepan.
  3. Stir until sugar is dissolved and bring to a boil over medium high heat.
  4. Add the pecans a few at a time, stirring constantly.
  5. When all the pecans have been added, continue to cook until pecans begin to lose their shine (2 to 3 minutes or more); remove pan from heat and continue to stir until all the pecans are clinging in a mass.
  6. Spread pecans on oiled surface to cool.
  7. Use 2 forks to separate pecans so they are not stuck together.
  8. When pecans are cooled and crisp, store in a covered jar.
  9. Makes 2 cups.
