Lemon Tea Bread
- 3/4 c. milk
- 1 Tbsp. chopped fresh lemon balm or 1 Tbsp. lemon juice
- 1 Tbsp. chopped fresh lemon thyme or 1 tsp. dried thyme
- 1/2 c. butter or margarine
- 1 c. sugar
- 2 large eggs
- 2 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 Tbsp. grated lemon rind
- Lemon Glaze
- Combine the first 3 ingredients in a saucepan; bring to a boil.
- Remove from heat.
- Cover; let stand 5 minutes.
- Cool.
- Beat butter at medium speed with an electric mixer until creamy. Gradually add sugar, beating well.
- Add eggs, one at a time, beating after each addition.
- Combine the next 3 ingredients; add to butter mixture alternately with milk mixture, beginning and ending with flour mixture.
- Mix after each addition.
- Stir in lemon rind.
