Key Lime Pie
- 1/2 c. sugar
- 1 envelope unflavored gelatin
- 1/4 tsp. salt
- 4 egg yolks
- 1 tsp. finely shredded lime peel
- 1/2 c. lime juice (fresh)
- 1 or 2 drops green food coloring
- 4 eggs whites
- 1/2 c. sugar
- 1 c. whipping cream
- In saucepan,
- combine
- 1/2 cup sugar, gelatin and salt. Beat egg yolks,time
- peel,
- lime
- juice and water until well blended. Stir
- into
- gelatin.
- cook
- and
- stir
- until mixture thickens slightly.
- Remove from heat, stir in food coloring to tint green. Chill until partially set, stirring mix occasionally.
- Beat egg whites
- totoft peaks. Gradually add 1/2 cup sugar, beating until stiff peaks form.
- Fold lime mixture into whites, whip cream
- to soft
- peaks,
- fold and chill until mix mounds.
- Fill
- into crumb
- crust.
- Garnish
- with
- chocolate shavings.
