Low-Fat Lasagna
- 1 lb. ground turkey (raw)
- 1 c. chopped onion
- 2 cloves garlic
- 1 (16 oz.) cans tomatoes, cut up
- 1 (8 oz.) can tomato sauce
- 1 (6 oz.) can tomato paste
- 2 tsp. dried basil, crushed
- 1 tsp. oregano, crushed
- 1 tsp. fennel seed, crushed
- salt to taste
- 1/8 tsp. ground red pepper
- 8 oz. lasagna noodles
- 1 beaten egg
- 2 c. low-fat Ricotta cheese or cottage cheese
- 3/4 c. grated Parmesan cheese
- 1 Tbsp. dried parsley flakes
- 1/2 tsp. pepper
- 8 oz. Mozzarella cheese (low-fat)
- In skillet, cook meat.
- Add onion and garlic and cook until brown and onion tender.
- Drain any fat.
- Stir in next 7 ingredients, stirring often, for about 15 minutes.
- Cook noodles (no oil) and drain.
- Stir together egg, Ricotta or cottage cheese, 1/2 cup Parmesan cheese, parsley and pepper.
