Western Pate
- 1/2 lb. bacon slices
- 1 lb. ground turkey
- 1/2 lb. ground pork
- 1 egg
- 2 cloves garlic, finely chopped
- 1 medium onion, chopped (about 1/2 c.)
- 1/2 c. diced red bell pepper
- 1/2 c. diced yellow bell pepper
- 1/2 c. unsweetened corn bread crumbs
- 2 Tbsp. chopped fresh cilantro
- 2 Tbsp. apple juice
- 1 tsp. salt
- 1/2 tsp. ground coriander
- Heat oven to 350u0b0.
- Line bottom of loaf pan crosswise with bacon slices, bringing bacon up sides and over edge of pan (reserve any remaining bacon slices).
- Mix remaining ingredients thoroughly.
- Spoon into pan, being careful not to disturb bacon. Smooth top.
- Fold bacon ends over top of meat mixture.
- Place remaining slices of bacon lengthwise on top.
- Cover with aluminum foil.
- Bake 1 1/2 to 2 hours or until done; drain carefully, leaving pate in pan.
- Let stand, uncovered, 1 hour before serving.
