Apple-Walnut Cake
- 1 1/3 c. packed brown sugar
- 1/2 c. oleo
- 1 Tbsp. vanilla
- 3 eggs
- 2/3 c. sour cream
- 1 1/4 c. shredded, peeled apple
- 3/4 c. chopped walnuts
- 2 1/4 c. flour
- 1/2 c. cornmeal
- 1 Tbsp. baking powder
- 2 tsp. salt
- 1/2 tsp. nutmeg
- Beat together brown sugar, butter and vanilla at medium speed on electric mixer, about 3 minutes or until light and fluffy.
- Add eggs, one at a time, beating well after each.
- Add combined flour, cornmeal, baking powder, cinnamon, salt and nutmeg alternately with sour cream, mixing well after each addition.
- Fold in apples and nuts.
- Spoon into well-greased 9-cup Bundt pan.
- Bake at 350u0b0 about 1 hour.
- Cool 10 minutes.
- Remove from pan.
- Ice with Browned Butter Icing.
