Seafood Au Gratin
- 1 1/2 lb. boneless, skinned trout or red fish
- 1/2 lb. shrimp or crab meat or 1/4 lb. each mixed
- 1/4 lb. fresh mushrooms, sliced
- 2 Tbsp. lemon juice
- 2 Tbsp. flour
- 2 egg yolks
- 1/2 c. bread crumbs
- 4 Tbsp. butter
- 2 Tbsp. butter
- 1 1/2 c. milk, heated
- 1/4 c. heavy cream
- 1/3 c. grated Parmesan cheese
- Be sure to remove skin and bones from fish and cut into small pieces.
- For individual servings in ramekins or sea shell servers, divide the fish, seafood and mushrooms into the servers equally. Sprinkle with lemon juice.
- Heat the butter in a 1 1/2-quart saucepan.
- Stir until thickened into a smooth sauce.
- Stir the egg yolks and cream together and add the hot sauce.
- Pour the sauce over the fish.
- Sprinkle with the bread crumbs, combined with the grated cheese and dot the surface with butter.
- Bake in a 350u0b0 oven for 20 minutes or until bubbling hot.
- Makes 4 servings.
