Moussaka
- 2 medium eggplants
- vegetable oil
- 1 lb. lean ground beef
- 2 medium onions, peeled and chopped
- 2 cloves garlic, peeled and crushed
- 1 (8 oz.) can tomato sauce
- 1 tsp. dried leaf oregano
- 1 tsp. salt, divided
- 1/4 tsp. black pepper, divided
- 2 Tbsp. butter or margarine
- 2 Tbsp. all-purpose flour
- 1 c. low-fat milk
- 1 egg
- 1/3 c. grated Parmesan cheese
- Peel eggplants; slice 1/4-inch thick. Brush rimmed cookie sheet with oil. Coat each slice of eggplant on both sides with oil; place on cookie sheet.
- Broil close to broiler until brown. Turn; brush with oil, if necessary.
- Brown the other side. Repeat with all the eggplant slices.
