Microwave Cheesy Chowder
- 1 1/2 c peeled potatoes, cut into 1/2 inch cubes
- 1 1/2 c fresh broccoli flowerets
- 1 c thinly sliced carrot
- 1/4 chopped onion
- 1/2 t minced garlic
- 1/8 t pepper
- 1/4 c water
- 1 3/4 c milk
- 1-16 oz can kidney beans, drained
- 1-10 3/4 oz can cheddar cheese soup, undiluted
- 1 c cheddar cheese, grated
- 1/4 t hot pepper sauce or to taste
- Put potatoes, broccoli, carrot, onion, garlic, pepper and water in a 3 quart microwave safe bowl.
- Cover with lid or vented plastic wrap.
- Microwave on high 8-10 minutes, stirring once, until vegetable are crisp-tender.
- Add milk, beans and soup. Cover and microwave on high 6-8 minutes, stirring once, until vegetables are tender.
- Add cheese and hot pepper sauce, stirring until cheese is melted.
- Serve hot.
