Homemade Wheat Bread
- 2 pkg. yeast
- 1/2 c. warm water
- 3 c. hot water
- 4 c. whole wheat flour
- 2/3 c. brown sugar
- 4 tsp. salt
- 6 Tbsp. shortening (1/4 c. plus 1/8 c.)
- 6 to 6 1/2 c. white flour
- Soften dry yeast in 1/2 cup warm water.
- Combine shortening. Stir in whole wheat flour and 1 cup white flour.
- Beat well.
- Stir in softened yeast.
- Add 3 cups white flour.
- Rest of flour will be used to knead dough.
- Knead dough for 1 to 12 minutes.
- Shape dough into ball.
- Cover in greased bowl big enough to let rise double in size for 1 1/2 hours.
- Punch down; shape into 3 smooth balls.
- Cover and let it rest for 10 minutes.
- Shape into 3 loaves.
- Put into greased pans and let rise until double (1 1/2 hours).
- Bake at 375u0b0 for 45 minutes.
- Cover loosely with foil if loaves brown too quickly.
