Spicy Pumpkin Cheesecake
- 1 egg yolk
- 1 graham cracker pie crust
- 2 (8 oz.) pkg. cream cheese, softened (at room temperature)
- 3/4 c. sugar
- 2 eggs
- 1 (16 oz.) can pumpkin
- 1 1/2 tsp. cinnamon
- 1/2 tsp. cloves
- whipped cream
- toasted pecan halves
- Beat egg yolk and brush on crust.
- Bake in a preheated 350u0b0 oven 5 minutes.
- Set aside.
- In a large mixer bowl, beat cream cheese, sugar and eggs on medium speed until smooth.
- Add pumpkin and spices.
- Continue mixing until well blended.
- Spoon into prepared pie crust and bake at 350u0b0 until set, about 40 to 45 minutes.
- Cool, then refrigerate several hours or overnight. Garnish with whipped cream and toasted pecan halves.
- Serves 12.
