Goulash(Steelworkers Hungarian Beef)
- 2 Tbsp. cooking oil
- 1 c. sliced onion
- 2 lb. stewing beef, cut up
- 1 (6 oz.) can tomato paste
- 3/4 c. green pepper
- 1/4 c. dry red wine
- 1 c. canned tomatoes
- 1 small bay leaf
- pinch of thyme, marjoram
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 tsp. paprika
- 1 Tbsp. cornstarch
- 2 Tbsp. water
- 1 tsp. sugar
- Heat oil in Dutch oven.
- Saute onions until golden.
- Add meat; brown lightly.
- Add remaining ingredients except for the cornstarch and water.
- Cover; simmer slowly for 1 1/2 to 3 hours until meat is tender.
- Skim off fat.
- Mix cornstarch and water; stir into meat gravy mixture.
- Bring to a boil, still stirring. Stir while it boils, 2 minutes.
- Serve with buttered noodles. Makes 6 servings.
