Stuffed Zucchini
- 1 1/2 lb ground meat
- 1/3 cup rice, partially cooked
- 1 egg
- 2 tablespoons romano cheese
- bread crumbs
- small onion, minced
- salt, pepper, garlic salt to taste
- 2 tablespoons parsley flakes
- cooked insides of zucchini (seeds and all)
- hollowed zucchini halves (boats)
- Cut zucchinis lengthwise.
- Scoop out centers leaving a wall around it.
- After cutting up the insides, cook them until soft in salted water.
- Drain well when done.
- Then mix together with all the above ingredients, except the boats.
- When mixed thoroughly fill the boats.
- Take a baking pan and place some spaghetti sauce in the bottom and then add the boats.
- Finally, drizzle some sauce on the top of the boats.
- Cover and bake at 350 degrees for about 1 1/2 hours.
