Peanut Butter Balls
- 2 c. margarine
- 1 1/2 c. peanut butter
- 2 (1 lb.) pkg. confectioners sugar
- 3/4 to 1 block paraffin
- 1 1/2 c. semi-sweet chocolate chips
- Cream margarine and peanut butter in medium bowl until light. Add confectioners sugar gradually, mixing well after each addition.
- Shape into 1-inch balls.
- Place balls on waxed paper-lined tray.
- Melt paraffin and chocolate chips in heavy saucepan over low heat, stirring constantly.
- Insert toothpick into each peanut butter ball; dip into chocolate mixture.
- Place on waxed paper-lined tray.
- Let stand until set.
- Store in airtight container.
- Paraffin measurement assumes paraffin to have 4 blocks in box.
- May add chopped pecans to peanut butter mixture or place pecan over hole made by toothpick.
- Yield: 80 servings.
