Marshmallows

  1. Lightly butter a 9-inch square pan.
  2. Set aside.
  3. In a small bowl, combine gelatin and cold water.
  4. Stir with a spoon until very thick.
  5. Allow to stand 5 minutes.
  6. In a 2-quart saucepan, combine hot water, 1/2 cup corn syrup and 2 cups granulated sugar.
  7. Place over high heat and stir with a wooden spoon until mixture comes to a boil.
  8. Cook to 238u0b0 or 115u0b0C or soft ball stage.
  9. Remove from heat.
  10. Stir in remaining 1/4 cup corn syrup.
  11. Pour into medium size bowl.
  12. Using an electric mixer at high speed; beat hot syrup and gelatin mixture 1 tablespoon at a time.
  13. Continue beating until gelatin is incorporated, candy is thick and has cooled to lukewarm, about 10 minutes.
  14. Stir in vanilla.
  15. Pour into a greased pan.
  16. Cool 3 hours or until marshmallows are firm enough to cut, using a knife dipped in hot water.
  17. Cut marshmallows into pieces 1 3/4 inches square.
  18. Roll cut marshmallows in powdered sugar to prevent sticking.
