Minestrone Casserole
- 1 lb. bulk mild Italian sausage
- 1 medium stalk celery, coarsely chopped (about 1/2 c.)
- 1 pkg. Hamburger Helper mix for spaghetti
- 1 (16 oz.) can whole tomatoes, undrained
- 1 (16 oz.) can whole kernel corn, undrained
- 1 (15 to 16 oz.) can kidney beans, undrained
- 1/2 c. hot water
- 1 1/2 tsp. chopped fresh or 1/2 tsp. dried thyme leaves
- Heat
- oven to 375u0b0.
- Cook sausage and celery in 10-inch skillet over medium heat, stirring occasionally, until sausage is done.
- Drain.
- Mix sausage mixture, spaghetti, sauce mix and remaining ingredients in ungreased 3-quart casserole or rectangular baking dish (11 x 7 x 1 1/2-inch).
- Break up tomatoes.
- Cover and bake about 50 minutes or until hot and bubbly.
- Stir.
- Let stand uncovered about 5 minutes before serving.
- Yields 6 servings.
