Applesauce Cake
- 1/2 c. shortening
- 1 1/2 c. sugar
- 2 eggs
- 1 c. thick, unsweetened applesauce
- 2 c. sifted all-purpose flour
- 1/4 tsp. salt
- 1 tsp. baking powder
- 1/2 tsp. soda
- 1/4 tsp. powdered nutmeg
- 1 tsp. powdered cinnamon
- 1/2 tsp. powdered cloves
- 1 c. dried currants, soaked and drained
- Start oven at moderate (350u0b0).
- Grease 8-inch square baking pan.
- Line with waxed paper.
- Grease paper.
- Cream shortening and sugar together in mixing bowl until light and fluffy.
- Add eggs and beat well.
- Add applesauce and mix.
- Sift dry ingredients together.
- Beat into batter until smoothly combined.
- Add currants.
- Pour into prepared pan.
- Bake 45 to 60 minutes or until done.
- Let cool in pan.
- Makes 8 or more servings.
- A good brunch cake.
