Onion-Cheese Casserole
- 2 c. finely crushed butter crackers, divided
- 1/2 c. butter, divided
- 3 lb. onions, sliced
- 2 Tbsp. flour
- salt and pepper
- 2 c. milk
- 1/2 lb. cheese, cut into small pieces
- sweet red pepper, cut into rings
- fresh jalapenos to garnish
- Preheat oven to 350u0b0.
- Spread 1 cup cracker crumbs in a greased 8 x 11-inch baking dish.
- In large skillet melt 1/4 cup butter over medium heat.
- Add onions.
- Cook until tender.
- Spoon onions over cracker crumbs.
- In same skillet, melt 1/4 cup butter. Stir in flour, salt and pepper.
- Cook 1 minute.
- Gradually stir in milk.
- Stir constantly.
- Cook until thickened.
- Add cheese and stir until smooth.
- Pour cheese mixture over onions.
- Sprinkle with remaining cracker crumbs.
- Bake 25 to 30 minutes.
- Garnish with red pepper and jalapenos.
