Chicken Sausage Gumbo

  1. Brown chicken in some fat in large iron pot.
  2. Remove chicken from pot.
  3. Add remainder of fat and flour, stirring constantly, until brown.
  4. Add celery, onions and bell pepper.
  5. Saute, stirring occasionally, until it begins to separate.
  6. Add cold water all at once.
  7. Bring to rapid boil.
  8. Add chicken*.
  9. Simmer for 1 hour. Add sausage.
  10. Season to taste with salt and pepper.
  11. Add parsley and green onions when chicken is cooked.
  12. Serve over rice.
