Chicken Sausage Gumbo
- 4 lb. chicken, cut up
- 1 1/2 c. fat
- flour (enough to make a roux of medium consistency)
- 4 onions, chopped
- 1 bell pepper, chopped
- 2 stalks celery, sliced
- 4 qt. cold water or chicken stock
- 1/2 lb. smoked sausage
- salt
- pepper
- 1 c. parsley, chopped
- 1/2 bunch green onions with tops
- 2 c. okra (optional)
- Brown chicken in some fat in large iron pot.
- Remove chicken from pot.
- Add remainder of fat and flour, stirring constantly, until brown.
- Add celery, onions and bell pepper.
- Saute, stirring occasionally, until it begins to separate.
- Add cold water all at once.
- Bring to rapid boil.
- Add chicken*.
- Simmer for 1 hour. Add sausage.
- Season to taste with salt and pepper.
- Add parsley and green onions when chicken is cooked.
- Serve over rice.
