Chimichangas(Leftover Meal)

  1. In skillet, heat 1 tablespoon oil.
  2. Add onions.
  3. Cook until clear.
  4. Add meat, olives, enchilada sauce and hot peppers to taste.
  5. Divide mixture among the flour tortillas.
  6. Fold ends in; roll into a packet (you may fasten with toothpicks, if necessary). Heat oil to hot.
  7. Brown for 1 minute on each side.
  8. Serve on bed of lettuce with cheese on top and tomatoes on side.
