Scotch Crunchies
- 1 (6 oz.) bag chocolate chips (1 c.)
- 1 (6 oz.) bag butterscotch chips (1 c.)
- 4 1/2 oz. cashews
- 1 (3 oz.) can chow mein noodles
- 3 ripe avocados
- 2 tomatoes
- 2 to 3 cloves garlic, diced
- 3 green onions, diced
- 6 leafy stems fresh cilantro, chopped
- 1 to 2 jalapenos, diced (if you like it mild, only 1)
- 1 tsp. garlic salt
- 1 tsp. black pepper
- On high heat, place tomatoes and jalapenos directly on stovetop until slightly roasted.
- Remove from heat.
- Peel and slice. Combine with avocados, garlic, onions, cilantro, garlic salt and pepper into a food processor.
- On low speed, blend ingredients until they appear blended into a lumpy texture, not creamy.
- (I prefer to hand mix in a mocahete, which adds just the right authentic flavor!)
- Serve with tortilla chips or as a topping on your favorite Mexican dish!
