Broccoli Stuffed Baby Portabella Mushrooms

  1. Preheat oven to 350u0b0.
  2. Remove mushroom stems and chop 1/2 c. mushroom stems.
  3. Discard extra.
  4. In a 10 inch skillet melt butter, saute onion and broccoli for 2 minutes, stirring occasionally. Add mushrooms stems, cook an additional 2 minutes, stirring occasionally; cool slightly.
  5. Stir in bread crumbs and cheese. Spoon vegetable mixture into mushrooms caps.
  6. Place on ungreased baking pan; garnish with bell pepper pieces.
  7. Bake for 15 minutes. This dish takes 45 minutes to prepare:
  8. 30 minutes prep and 15 minutes cooking.
