Broccoli Stuffed Baby Portabella Mushrooms
- 1 10 oz. pkg. baby mushrooms or large button mushrooms
- 2 Tbsp. butter
- 1/2 c. red onion chopped
- 1 c. broccoli chopped
- 1/4 c. seasoned dry bread crumbs
- 5 1/4 oz. boursin spreadable cheese with garlic and herbs
- 1 Tbsp. red peppers roasted and chopped
- Preheat oven to 350u0b0.
- Remove mushroom stems and chop 1/2 c. mushroom stems.
- Discard extra.
- In a 10 inch skillet melt butter, saute onion and broccoli for 2 minutes, stirring occasionally. Add mushrooms stems, cook an additional 2 minutes, stirring occasionally; cool slightly.
- Stir in bread crumbs and cheese. Spoon vegetable mixture into mushrooms caps.
- Place on ungreased baking pan; garnish with bell pepper pieces.
- Bake for 15 minutes. This dish takes 45 minutes to prepare:
- 30 minutes prep and 15 minutes cooking.
