Apple Cake
- 3 c. unbleached flour
- 2 c. sugar
- 3 tsp. baking powder
- 1 c. cooking oil
- 1/3 c. orange juice
- 1 tsp. lemon flavoring
- 3 eggs, beaten
- 2 c. finely diced (2 large or 2 medium) apples
- 1 tsp. cinnamon mixed with 1/2 c. sugar
- Sift flour, sugar and baking powder together into a large bowl.
- Combine oil, orange juice, flavoring and eggs; add it to the dry ingredients, a little at a time.
- Mix until smooth (don't overmix).
- Grease and flour a 10-inch tube pan.
- Pour half the batter into the pan.
- Spread half the apples evenly over the batter and sprinkle with half the cinnamon-sugar.
- Repeat with other half.
- Bake in a preheated 350u0b0 oven for 1 and 1/4 hours. Remove from oven, place on a rack and let stand about 10 minutes before removing from pan.
