Pumpkin Bran Muffins(Low-Fat)
- 1 1/2 c. flour
- 1/2 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 c. egg substitute
- 1 c. canned pumpkin
- 1/4 tsp. ginger
- 1/8 tsp. cloves
- 1 c. raisin bran cereal
- 3/4 c. skim milk
- 1/2 c. light corn syrup
- Spray 12 muffin cups with a nonfat cooking spray.
- In a medium bowl combine flour, sugar, baking powder, baking soda, salt, cinnamon, ginger and cloves.
- In a large bowl using a wire whisk, beat egg substitute.
- Stir in pumpkin, cereal, milk and corn syrup. Add to flour mixture; stir until well blended.
- Spoon into prepared muffin cups.
- Bake at 400u0b0 for 18 to 20 minutes.
- Cool in pan 5 minutes.
