Simple Raisin Bread
- 3 c. all-purpose flour
- 1 tsp. baking powder
- 3/4 tsp. salt
- 1/2 tsp. baking soda
- 2 c. dark raisins
- 1/2 c. golden raisins
- 1 c. buttermilk
- 1/3 c. firmly packed brown sugar
- 1/4 stick butter, melted and cooled
- 2 large eggs
- Preheat the oven to 375u0b0.
- Grease a 9 x 5-inch loaf pan.
- Mix together flour, baking soda, salt and baking powder.
- Stir in raisins.
- Beat together buttermilk, brown sugar and melted butter at medium speed until well blended.
- Add eggs, one at a time, beating well after each addition.
- At low speed, beat flour mixture into buttermilk mixture, 1/2 cup at a time, until well combined.
- Spoon batter into prepared pan; smooth top.
- Bake bread until a toothpick inserted in the center comes out clean, 50 to 60 minutes.
- Transfer pan to wire rack to cool for 10 minutes. Loosen bread by running a metal spatula around sides of pan.
- Turn bread out onto rack to cool completely.
