St. Peter'S By The Sea Snapper
- 4 (6 to 8 oz.) red snapper fillets
- 1 1/4 c. fresh lime juice
- 1/2 c. white vinegar
- 1/2 c. finely chopped fresh parsley
- 1 c. finely chopped green onion
- 1/2 c. finely chopped white onion
- 1/2 c. minced garlic
- 1 1/2 c. Canola oil
- salt to taste
- freshly ground black pepper to taste
- 1 Tbsp. chopped hot pepper (your choice, optional)
- 1 (6 oz.) can tomato paste
- flour for coating fish
- lime and tomato slices for garnish
- Marinate the red snapper fillets in the lime juice for at least 1 hour at room temperature.
- In a large bowl, combine the vinegar, parsley, green onion, white onion and garlic.
- Slowly whisk in 1/2 cup of the oil, followed by the salt, pepper, hot pepper and tomato paste.
- Whisk until the ingredients are thoroughly combined.
- Set aside.
