Sugar-Free Gingerbread Cookies
- 1/3 c. diet margarine
- 3 Tbsp. butter or shortening
- 1 egg
- 1/2 tsp. vanilla extract
- 1 1/2 c. all-purpose flour
- 1 tsp. baking powder
- 3/4 tsp. ground ginger
- 1/2 tsp. pumpkin pie spice
- 12 packets sugar substitute
- 1/2 tsp. ground cinnamon
- 2 Tbsp. boiling water
- Beat margarine, butter, egg and vanilla until fluffy. Stir together flour, baking powder, ginger and pumpkin pie spice (or in place of pumpkin pie spice, use a pinch of each: ground cinnamon, nutmeg, allspice, clove). Add to egg mixture and mix well (batter will be stiff). Roll out thinly and cut into 2-inch rounds with an inverted glass, or cut into shapes with a decorative cookie cutter. Arrange cookies 1-inch apart on baking tray sprayed with baking spray. Bake in a preheated 375u0b0 oven 6 or 7 minutes.
