Spinach Madaline
- 2 pkg. frozen chopped spinach
- 4 Tbsp. butter
- 2 Tbsp. flour
- 2 Tbsp. chopped onion
- 1/2 c. evaporated milk
- 1/2 c. liquid from spinach
- 1 (6 oz.) roll jalapeno cheese
- 1/2 tsp. black pepper
- 1/2 tsp. celery salt
- 1/2 tsp. garlic salt
- 1 tsp. Worcestershire sauce
- red pepper to taste
- 1 c. buttered bread crumbs
- Cook spinach according to directions.
- Drain spinach and save liquid.
- Melt butter in pan and add flour, stirring until completely blended but not browned.
- Add onion and cook.
- Add milk and liquid from spinach slowly, stirring constantly to avoid lumps.
- Cook until smooth and thick.
- Add cheese and rest of seasonings.
- Stir until cheese is melted.
- Combine with cooked spinach.
- Put in casserole dish.
- Top with buttered bread crumbs and bake until warm.
- Freezes well.
