Libby'S White Chili
- 2 lbs diced chicken breasts
- 1 medium onion, diced
- 1/4 cup butter
- 1 (15 1/4 ounce) can whole sweet corn
- 1 teaspoon diced garlic
- 3 (15 1/2 ounce) cans of great value white great northern beans
- 1 (26 ounce) jar limes, salsa great value brand from walmart
- 1 (16 ounce) container sour cream
- 2 cups monterey jack cheese, shredded
- 2 (1 1/4 ounce) packages white chili seasoning mix
- 2 (32 ounce) boxes chicken broth
- Melt butter, clarify onions and garlic.
- Add in chicken cook until done.
- Add beans, corn, salsa and chicken broth.
- Bring to a slight boil for 10 minutes then turn down to simmer.
- Add sour cream and cheese then simmer for 45 minutes while stirring.
