Spanakopita Pizza

  1. Preheat oven to 450 degrees.
  2. Heat medium frying pan over medium heat. Add spinach and garlic and let wilt in pan, stirring occasionally.
  3. Place colander in sink, add cooked spinach, and press out any excess liquid. Set aside.
  4. Shape and stretch dough into 12" circle.
  5. Sprinkle counter with cornmeal. Place circle of dough on top and press down lightly and transfer to pizza pan.
  6. Spread tapenade evenly over pizza crust.
  7. Evenly divide cooked spinach over top. Sprinkle with olives (if using), feta cheese and green onions.
  8. Bake for 12 - 15 minutes.
