Fig , Caramelized Onion And Blue Cheese Tart

  1. Preheat oven to 400u0b0F.
  2. Soak figs in hot/boiling water for 1/2 hr.to soften. Set aside.
  3. Lightly coat baking tray with olive oil.
  4. Spread pastry on baking tray, join edges and pierce with fork to allow air to escape during baking.
  5. Bake until light brown (approx. 5-7 min.).
  6. Cook onions in butter and olive oil over medium heat until soft caramelized.
  7. Add brown sugar, salt and pepper, thyme and cook over low heat for 5 minute.
  8. Add drizzle of balsamic vinegar in last 2 minutes.
  9. Pour onion mixture over pastry covering to edges.
  10. Add figs (cut into small chunks).
  11. Sprinkle with cheese.
  12. Drizzle with olive oil.
  13. Bake at 400F fro 10-12 minutes.
  14. Cool before cutting.
  15. Cut into appetizer size pieces.
