Coconut Cake

  1. Sift flour with baking powder and salt 3 times.
  2. Cream butter and sugar thoroughly until light and fluffy.
  3. Add egg yolks and beat well.
  4. Add flour and coconut milk alternately, a small amount at a time, beating after each addition until smooth.
  5. Add vanilla and coconut.
  6. Fold in egg whites that have been beaten.
  7. Bake in 3 large cake pans at 350u0b0 for about 30 to 35 minutes.
  8. Spread with Seven Minute Icing; sprinkle with fresh grated coconut.
