Coconut Cake
- 3 c. all-purpose flour
- 1 c. butter or 1/2 c. butter and 1/2 c. margarine
- 1 c. fresh grated coconut
- 1 c. coconut milk
- 4 well beaten egg yolks
- 3 tsp. baking powder
- 1 tsp. vanilla
- 1 lb. confectioners sugar
- 4 egg whites, stiffly beaten
- 1/4 tsp. salt
- Sift flour with baking powder and salt 3 times.
- Cream butter and sugar thoroughly until light and fluffy.
- Add egg yolks and beat well.
- Add flour and coconut milk alternately, a small amount at a time, beating after each addition until smooth.
- Add vanilla and coconut.
- Fold in egg whites that have been beaten.
- Bake in 3 large cake pans at 350u0b0 for about 30 to 35 minutes.
- Spread with Seven Minute Icing; sprinkle with fresh grated coconut.
