Baked Apple Pancake
- Apple Filling
- 2 tablespoons butter
- 2 tablespoons sugar
- 1/2 teaspoon cinnamon
- 2 cups apples, sliced
- Batter
- 2 eggs, separated
- 2 2/3 tablespoons flour
- 1/4 teaspoon baking powder
- 2 2/3 tablespoons milk
- 1 dash salt
- Preheat oven to 400 degrees fahrenheit.
- Prepare an 8"x8" pan with cooking spray.
- Melt butter and lightly saute sugar, cinnamon and apples for 5 minutes. Spoon apples into baking pan.
- Beat egg whites until stiff. Set aside.
- Beat flour, baking powder, milk, salt, and egg yolks until smooth.
- Fold egg whites and batter together.
- Pour batter over apple slices.
- Bake at 400 degrees fahrenheit for about 10 to 12 minutes or until pancake is done.
- Serve immediately with maple syrup.
