Clams Casino Dip
- 3 (8 oz.) cans minced clams or 4 (6 1/2 oz.) cans (reserve 1 can clam juice)
- 1 small jar chopped pimento
- 1 stick butter
- 1 lb. bacon
- 1 large onion, chopped
- 1 green pepper, chopped
- 3 stalks celery, chopped
- 2/3 roll Ritz crackers
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. Parmesan cheese
- 1 Tbsp. lemon juice
- hot sauce
- Fry bacon; drain fat.
- Chop bacon.
- Saute pepper and celery. Add onion and chopped bacon; continue cooking until onion is translucent.
- Crumble crackers.
- Melt butter.
- Add butter to crackers.
- Add crumb mixture to vegetables in skillet.
- Add pimento, clams and clam juice; season with salt, pepper, Parmesan cheese, lemon juice and hot sauce (2 to 3 drops).
- Place in casserole and bake at 350u0b0 for 35 to 40 minutes.
- Serve in chafing dish with crackers.
