Spinach-Ham Rolls
- 1 c. cottage cheese
- 3/4 c. commercial sour cream
- 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
- 1 1/2 c. herb seasoned stuffing mix
- 1 egg, beaten
- 1/4 c. minced onion
- 1/2 tsp. dry mustard
- 12 (1/8-inch thick) slices ham (about 1 1/2 lb.)
- Cheese Sauce
- paprika
- green onion tops, sliced
- parsley sprigs
- Combine cottage cheese and sour cream in container of an electric blender.
- Process until smooth.
- Combine sour cream mixture and next 5 ingredients; mix well.
- Spoon 1/4 cup mixture on each slice of ham.
- Roll up and place seam side down in a lightly greased 13 x 9 x 2-inch baking dish.
- Top with Cheese Sauce. Sprinkle with paprika.
- Garnish with onion tops and parsley. Yields 12 servings.
