Santa Fe Casserole
- 1 lb. lean ground beef
- 1 (1 oz.) pkg. taco seasoning mix
- 2 c. water
- 2 tsp. chicken bouillon
- 1/4 c. all-purpose flour
- 1 c. sour cream
- 1 (7 oz.) can diced green chilies
- 1 (11 oz.) pkg. tortilla chips
- 2 c. (8 oz.) grated Monterey Jack or Cheddar cheese
- 1/2 c. sliced green onion, including tops
- In medium skillet, brown meat until cooked through; drain fat.
- Add taco seasoning mix, blending well.
- In separate bowl, combine bouillon, flour and water.
- Add to meat; bring to a boil to slightly thicken liquid.
- Stir in sour cream and green chilies; blend thoroughly.
- In lightly greased 13 x 9-inch baking dish, place 1/2 of chips.
- Top with 1/2 beef mixture, 1/2 cheese and 1/2 of onions.
- Layer again with remaining ingredients, ending with green onions.
- Bake at 375u0b0 for 20 minutes.
- Let stand 5 minutes before cutting.
