Salmon And Fresh Dill Cheesecake
- 1/2 lb. fresh salmon fillet, skin removed
- white pepper to taste
- nonstick vegetable or olive oil spray
- 1 1/4 c. grated Parmesan cheese
- 4 large eggs
- 1/4 c. minced fresh chives
- white pepper to taste
- seasoned salt (such as Lawry's)
- 1 Tbsp. butter or margarine, cut into 4 pieces
- 3/4 c. Italian style breadcrumbs
- 3 Tbsp. melted butter or margarine
- 1/2 c. minced fresh dill
- 2 tsp. minced lemon peel (zest; colored part only)
- 1 c. light sour cream
- bagel chips, crackers or thin slices French bread
- 3 bunches fresh herbs, such as dill, basil and thyme (optional garnish)
- Position oven rack 7-inches from broiler element.
- Preheat broiler.
- Line a jelly roll pan or small baking pan with aluminum foil.
- Place salmon on prepared pan.
- Season with seasoned salt and white pepper.
- Place 1 tablespoon of butter or margarine, cut into pieces, on top.
