Lazy Daisy Cake
- 3 large eggs
- 1 c. sugar
- 1 tsp. vanilla
- 1 c. flour
- 1 tsp. baking powder
- 1/2 c. milk
- 1 Tbsp. butter
- 1/2 c. brown sugar
- 2 Tbsp. melted butter
- 1/2 c. walnuts (optional)
- 1/2 c. coconuts (optional)
- Beat eggs until thick.
- Add sugar gradually, beating constantly.
- Add vanilla.
- Sift together flour and baking powder; add to mixture and mix well.
- Heat to boiling point milk and butter, add all at once to mixture.
- Beat well.
- Do not add any more flour to batter, it is very thin.
- Bake at 350u0b0 for 30 to 40 minutes.
- When cake is done, remove from oven and spread with blended mixture of melted butter, brown sugar and cream. (Optional:
- Walnuts and/or coconut.)
- Place under broiler until topping bubbles up.
- Remove to cool.
