Mandarin Chicken With Noodles
- 1 lb. skinless, boneless chicken breast halves, cut into bite size strips
- 1 (3 oz.) pkg. Oriental noodles with chicken flavor packet
- 1 small zucchini, sliced
- 2 stalks celery, sliced
- 2 cloves garlic, minced
- 1/4 c. bottled sweet and sour sauce
- 2 Tbsp. coarsely chopped peanuts
- 1 (11 oz.) can mandarin orange sections, drained
- Spray a large skillet with nonstick coating.
- Preheat skillet over medium heat.
- Stir-fry chicken, half at a time, about 3 minutes or until no longer pink; remove.
- Break up the Oriental noodles (set flavor packet aside).
- Add noodles, zucchini, celery, garlic and 1 cup of water to skillet.
- Bring to boiling; reduce heat.
- Cover; simmer 3 to 5 minutes or until noodles and vegetables are tender.
- Stir in chicken, the flavor packet contents, sweet and sour sauce and peanuts; heat through.
- Top each serving with orange sections.
- Makes 4 servings.
