Mandarin Chicken With Noodles

  1. Spray a large skillet with nonstick coating.
  2. Preheat skillet over medium heat.
  3. Stir-fry chicken, half at a time, about 3 minutes or until no longer pink; remove.
  4. Break up the Oriental noodles (set flavor packet aside).
  5. Add noodles, zucchini, celery, garlic and 1 cup of water to skillet.
  6. Bring to boiling; reduce heat.
  7. Cover; simmer 3 to 5 minutes or until noodles and vegetables are tender.
  8. Stir in chicken, the flavor packet contents, sweet and sour sauce and peanuts; heat through.
  9. Top each serving with orange sections.
  10. Makes 4 servings.
