Skillet Chicken And Sausage
- 1 lb. Italian sweet sausage
- 1 (3 lb.) chicken, cut up
- salt and pepper
- 1 1/2 c. converted rice
- 2 (13 3/4 oz.) cans chicken broth
- 1 (8 oz.) can tomato sauce with onions
- 1 (10 oz.) pkg. frozen peas
- 1 (4 oz.) can sliced mushrooms, drained
- 1 (4 oz.) jar pimientos, drained and diced
- In a large skillet, fry sausage until brown and well cooked; remove and cut into 1/2-inch rounds.
- Sprinkle chicken with salt and pepper and brown on all sides in sausage drippings; remove. Add rice to drippings and cook until brown, stirring constantly. Add chicken, sausage, chicken broth and tomato sauce.
- Cover and simmer 40 minutes or until liquid is absorbed and rice and chicken are tender.
- Stir in peas, mushrooms and pimiento; cover and simmer for 5 minutes or until peas are tender.
