Chili

  1. Dice onions, carrots, peppers and celery; cook mixture in oil with 1 to 1/4 ratio of oil/olive oil (1/4 the amount of olive oil versus vegetable oil).
  2. Cook until there is no crunch to the onions.
  3. Mix the 28-ounce can of tomatoes with the mixer, leaving some chunks to tomatoes.
  4. Pour the small can of tomatoes in the blender.
  5. Add the spices; blend this until smooth.
  6. Put the mixture in a pan; cook for 4 1/2 minutes.
  7. Cook the meats until done.
  8. Mix the tomato mixture, sauce and meat together; simmer for 22 minutes.
  9. Taste for saltiness and spice heat.
  10. If it is not spicy enough, put in jalapeno sauce or cayenne pepper until it satisfies your taste.
