Chili
- 2 1/2 lb. ground beef
- 1 lb. sausage
- 3 sticks celery
- 2 medium carrots
- 3 medium onions
- 1 (28 oz.) can tomatoes
- 1 (14 oz.) can tomatoes
- 2 medium peppers (your choice)
- 1/8 tsp. garlic powder
- 1/4 tsp. oregano (ground)
- 5 Tbsp. chili powder
- 1/2 tsp. salt
- 1/2 tsp. onion salt
- 1/2 Tbsp. cumin
- 1/2 tsp. pepper
- pinch of cinnamon
- Dice onions, carrots, peppers and celery; cook mixture in oil with 1 to 1/4 ratio of oil/olive oil (1/4 the amount of olive oil versus vegetable oil).
- Cook until there is no crunch to the onions.
- Mix the 28-ounce can of tomatoes with the mixer, leaving some chunks to tomatoes.
- Pour the small can of tomatoes in the blender.
- Add the spices; blend this until smooth.
- Put the mixture in a pan; cook for 4 1/2 minutes.
- Cook the meats until done.
- Mix the tomato mixture, sauce and meat together; simmer for 22 minutes.
- Taste for saltiness and spice heat.
- If it is not spicy enough, put in jalapeno sauce or cayenne pepper until it satisfies your taste.
