Divinity Candy

  1. Combine sugar, corn syrup and water in saucepan.
  2. Stir over low heat until dissolved; bring to boiling, stirring often.
  3. Cook without stirring to 248u0b0 or until a little dropped in a cup of cold water forms a firm ball.
  4. While candy is cooking, beat egg white and cream of tartar stiff but not dry.
  5. Use a large mixer bowl.
  6. While beating constantly, pour syrup in a fine stream over beaten egg whites.
  7. Add vanilla and continue to beat until candy forms a peak and loses its gloss.
  8. Stir in chopped nuts by hand. Drop onto wax paper.
  9. Make the size you want.
  10. I use a heaping tablespoon.
  11. Push off spoon with spatula or knife.
  12. Use cherries for garnish.
