Divinity Candy
- 4 c. granulated sugar
- 1 c. white Karo syrup
- dash of salt
- 3/4 c. boiling water
- 5 egg whites
- 1/4 tsp. cream of tartar
- 1 1/2 tsp. vanilla
- 1 c. chopped pecans
- candied green and red cherries
- Combine sugar, corn syrup and water in saucepan.
- Stir over low heat until dissolved; bring to boiling, stirring often.
- Cook without stirring to 248u0b0 or until a little dropped in a cup of cold water forms a firm ball.
- While candy is cooking, beat egg white and cream of tartar stiff but not dry.
- Use a large mixer bowl.
- While beating constantly, pour syrup in a fine stream over beaten egg whites.
- Add vanilla and continue to beat until candy forms a peak and loses its gloss.
- Stir in chopped nuts by hand. Drop onto wax paper.
- Make the size you want.
- I use a heaping tablespoon.
- Push off spoon with spatula or knife.
- Use cherries for garnish.
