After Holiday Casserole
- 1 c. rice (instant or cooked)
- 2 tsp. instant minced onion
- 1/2 pkg. or 5 oz. frozen green peas
- 1/2 c. finely diced green pepper
- 6 slices turkey
- 1 (10 3/4 oz.) can cheese soup
- 1 c. milk
- 1 c. finely crushed cheese crackers
- 3 Tbsp. melted butter
- Prepare rice according to directions on box, adding minced onion to boiling water.
- Fluff rice with a fork and spread in a 1 1/2-quart utility dish.
- Defrost peas and drain.
- Sprinkle peas and green pepper over rice.
- Cover with turkey.
- (You may break turkey into small pieces or leave in slices.
- Chicken can be used.)
- Mix soup with milk and pour over turkey.
- Combine crumbs with butter and sprinkle on top of casserole.
- Cover dish with plastic film and cook in microwave oven for 12 minutes, turning dish every 3 minutes.
- Let stand, covered, 5 minutes before serving.
