Mushroom Barley Soup With Herbs
- 2 cups finely chopped onions
- 1 cup diced carrot
- 1/2 cup finely chopped celery
- 1 tablespoon vegetable oil
- 16 ounces mushrooms, sliced
- 1 teaspoon minced garlic
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon dried tarragon
- 1/2 teaspoon celery seed
- 2 cups beef stock
- 2 cups chicken stock
- 2 cups water
- 1/2 cup pearl barley
- salt and pepper
- 3 tablespoons chopped parsley
- Saute onions, carrot and celery in oil until browned, about 8 minutes.
- Stir in mushrooms, garlic and herbs. Saute 3 minutes.
- Stir in stocks, water and barley. Heat to boiling. Reduce heat and simmer, covered, until barley is tender, 45-60 minutes.
- Season to taste with salt and pepper. Stir in parsley.
