Mushroom Barley Soup With Herbs

  1. Saute onions, carrot and celery in oil until browned, about 8 minutes.
  2. Stir in mushrooms, garlic and herbs. Saute 3 minutes.
  3. Stir in stocks, water and barley. Heat to boiling. Reduce heat and simmer, covered, until barley is tender, 45-60 minutes.
  4. Season to taste with salt and pepper. Stir in parsley.
