Beef Jerky
- 3 lb. flank steak or round steak, cut 1/2-inch thick
- 1 1/2 Tbsp. salt
- 1/2 c. warm water
- 1/2 c. soya sauce
- 1/2 c. Worcestershire sauce
- 1 tsp. coarse ground pepper
- garlic powder to taste
- Cut meat in 3/4-inch wide strips with grain.
- Dissolve salt in warm water and then add remaining ingredients.
- Soak meat in mixture about 2 hours, turning strips of meat frequently so that each piece is drenched with mixture.
- Place strips of meat on paper towels for a few minutes.
- Then place strips of meat on oven rack.
- Turn heat on to 120u0b0 to 130u0b0 and cook at this temperature for 8 to 9 hours with oven door slightly cracked open.
- After cooking, turn off heat, open oven door and let air dry for 8 more hours.
- Package jerky in bags or jars.
