Bran Blueberry Muffins
- 1 1/2 c. bran cereal
- 3/4 c. buttermilk
- 1/3 c. honey
- 1/4 c. vegetable oil
- 2 eggs or egg substitute
- 1 c. all-purpose flour
- 1/2 c. oat or wheat bran
- 2 1/2 tsp. baking powder
- 1/2 tsp. soda and salt
- 1 c. blueberries
- In a large bowl, combine bran cereal, buttermilk, honey and oil and add beaten eggs.
- Let stand 10 minutes.
- In a second bowl, combine flour, oat or wheat bran, baking powder, soda and salt. Mix and add to cereal mixture; stir just until moistened.
- Gently fold in blueberries.
- Spoon batter into muffin tins sprayed with vegetable cooking spray.
- Bake for 25 minutes in a 400u0b0 oven or until a wooden pick comes out clean.
- Cool in pan minutes, then remove from pan on rack to cool.
