Shrimp Creole Microwave
- 2 Tbsp. butter or margarine
- 3/4 c. chopped green pepper
- 1 c. chopped onion
- 1 c. chopped celery
- 1 to 2 Tbsp. all-purpose flour
- 1 (14 1/2 oz.) can tomatoes
- 5 to 6 drops Tabasco sauce
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 lb. shrimp, shelled and cleaned
- 1 bay leaf
- Place butter in 2 1/2-quart casserole.
- Heat full power 20 to 30 seconds or until melted.
- Stir in green pepper, onion and celery. Cook full power 6 to 8 minutes until vegetables are tender. Stir halfway through. Sprinkle vegetables with flour and stir to blend.
- Mix in tomatoes. Cook full power until heated, 4 to 6 minutes. Stir halfway through cooking time. Blend in remaining ingredients. Cook full power about 6 minutes, or until shrimp are fully cooked.
- Stir twice during time.
- Remove bay leaf.
