Bacon Cheddar Little Potatoes
- 1 1/2 lbs new potatoes, sliced in half lengthwise
- 1 small onion, diced
- 2 teaspoons seasoning salt
- 1 teaspoon garlic salt
- 2 tablespoons butter, cubed
- 2 cups cheese, three cheese blend, shredded
- 1 cup bacon, cooked and crumbled
- 1/4 cup sliced green onion, for topping (more or less as desired)
- Preheat oven to 400 degrees. Spray an 8 x 8 baking dish with nonstick cooking spray.
- Combine potatoes, onion, seasoned salt and garlic salt.
- Stir until the potatoes are coated with the seasoning. Pour mixture into prepared baking dish.
- Dot the top of the potatoes with cubed butter.
- Bake uncovered for 30 minutes, or until potatoes are fork tender.
- Remove pan from oven, then add shredded cheese and crumbled bacon. Return pan to the oven and back for another 8-10 minutes until cheese is melted.
- Remove pan from oven and sprinkle with the sliced green onions before serving.
