Meat Balls
- 1 slice bread
- 2 Tbsp. milk
- 1 lb. ground beef
- 1/2 lb. ground pork
- 1/2 lb. ground veal
- 2 eggs, beaten
- 8 fresh parsley sprigs
- 12 chive leaves, chopped fine
- 1 lemon rind, grated
- 2 Tbsp. butter
- 6 Tbsp. grated Parmesan cheese
- 6 Tbsp. grated Romano cheese
- 1/2 tsp. salt
- fresh ground pepper
- 1 oz. salt pork, sliced
- 1/4 c. olive oil
- 1 medium onion, chopped
- 3 garlic cloves, chopped
- Soak bread in milk, squeeze and shred.
- Add to bread: the meat, eggs, parsley, chives, lemon rind, butter, half of both cheeses, salt and pepper.
- Mix very well.
- Make balls about 1 1/2-inches in diameter.
- Combine salt pork and olive oil in skillet, heat and add onions and garlic.
- Cook until brown.
- Add meat balls and brown.
- Cover and simmer for 45 minutes.
- Add balls to sauce and continue cooking for 1 hour.
- Sprinkle with remaining cheeses.
- Serve over angel hair pasta.
